Last night I made a very tasty vegetarian gluten-free curry for dinner :) We picked out a new kind of curry to try at the store and I sauteed up cauliflower, zucchini, summer squash, carrots, potato, chickpeas, onion, green pepper, and a bit of garlic. Added in the curry paste with a little water and simmered the whole thing for 10 minutes or so.
Served over saffron rice it was just about the most delicious thing I’ve eaten in a long time. I’m going to have to go write down the brand that we used so that I can buy some more.
I have some leftovers (I made a HUGE batch) for lunch today and I’m just counting down the minutes until I can go eat it! I packed leftovers into bento boxes so that Katie and I could have lunches all week. Our friend Tanya brought an awesome bento yesterday and it really made me want to make bento again. I think I might invest in a few decorative accessories from ichibankan and try to make us bento lunches a bit more regularly. I run out of food ideas and tend to stop making them. But if I’m smart and pack them the night before I can do it.
So I’m collecting bento ideas, anyone that has a good recipe please drop it by here. Just a few qualifiers: We don’t do seafood. We love vegetarian ideas even though we’re not vegeterians. But we ARE weight watchers, so lower calorie tasty-delicious things are great.
In other news, I’m working on a few seekrit crochet projects which I should be able to post about soon, and I am ALMOST registered for my fall classes. Dealing with URI (University of Rhode Island) has been (again) an enormous headache and an array of incompetence. They sat on paperwork mailed in to them for MORE THAN A MONTH without even looking at it.
I’m so disgusted with that school and I heartily DO NOT RECOMMEND that anyone consider attending. There are far better schools for your money and for your educational needs. Even my professor this semester (a lovely and talented adjunct professor) says that she’s had trouble dealing with them. They offer the regional program but then are unwilling to make allowances for regional students. Such as requiring that you pick up and turn in forms IN PERSON.
It’s more than ridiculous. But I’m almost done, thanks be to someone. I can’t wait to be done with them!
And now it’s time to go and have my curry bento for lunch! Hoorah!
